Rule number one,

Scoby is NOT Kombucha

A scoby is not a kombucha. Likewise a kombucha is not a scoby. This is one of the major misconception.

Scoby stands for Single Colony of Bacteria and Yeast. It is the interaction between the colony of bacteria and yeast and through the process of fermentation that produces the drink we call kombucha.

Let us now create the actual relationship between a scoby and kombucha.

If S = scoby, K=kombucha, t= sugared tea

K = (S+ T + 0.1K) over 7-10 days

Rediscovering Kombucha

Why did I started this blog? I came across that drink called kombucha almost 3 years ago. A gooey mixture floating in a jar, very much like a something from a science experiment gone awfully wrong.

“Will you like to try a cup?”. I can still recall my cousin offering me the drink for the first time. Fear and excitement coursed through my veins as I extended my hands to accept the drink listed as one of the top 10 scariest food in the world!

I felt a light burning sensation on my throat once the cider-like tasting drink entered my system. Surprisingly, I felt refreshed after drinking kombucha. That was the beginning of my involvement with kombucha. And I was pretty surprised that this ancient drink is almost unknown to most young Malaysians.

Thus I have decided to share my experience as a kombucha brewer with a hope that kombucha and all of its benefits is reintroduced back into the lives of Malaysians.
